Cheese Waffy with a spicy mexican dip
Ingredients
1 packet Dukes cheese waffy Ingredients for the dip:
- 1 ½ cup kidney beans boiled
- ½ cup tomato finely chopped
- ½ cup onion finely chopped
- ½ cup capsicum finely chopped
- ¼ cup coriander finely chopped
- 1 tsp lemon juice
- 2 tsp jalapeno chilli finely chopped
- 2 tsp olives finely chopped
- 2 tbsp tomato ketchup
- 2 tbsp red chilli sauce
- 1 tsp red chilli powder
- 1 tsp pepper
- 1 tsp oregano
- Salt to taste
To garish:
- Fresh coriander
- Red bell pepper julienned
Preparation time
40 minutes
Method
- Roughly mash the kidney beans.
- Mix everything together.
- Adjust with ¼ cups water if the mixture is too stiff.
- Serve with cheese waffy. Enjoy!
